Cool drinks for hot days

With temperatures climbing, whip up these frosty and refreshing drink recipes developed by the School of Hospitality.

Michael WrayJuly is the hottest month of the year in Colorado, but the School of Hospitality is offering beverage recipes to cool you down.

To celebrate National Culinary Arts Month, Professor Michael Wray, Ph.D., chef and sommelier, shares some tantalizing drinks to try at home. Alcoholic beverage recipes are only intended for those 21 years old and over. Please remember to drink responsibly.

Blackjack Shooter

1 oz. Anisette

1 oz. Kahlua

Pour equal parts of anisette and Kahlua over ice. Stir to chill. Strain into shooter.

 

Pina Colada Smoothie (nonalcoholic)

1 cup skim milk, milk alternative or cream

¼ cup protein or whey powder of choice

? cup Coco Lopez Piña Colada mix

? cup crushed pineapple

1 cup ice

Can of light whipped cream

1 Maraschino cherry

1 pineapple slice or ring

Combine milk, protein powder, Piña Colada Mix, pineapple and ice in a blender. Start on slow, then blend on high speed until smooth.

Garnish with light whipped cream, cherry and a pineapple slice.

Note: For a traditional Piña Colada with rum, delete the protein powder, use ½ cup cream or half-and-half instead of milk, and add 2 oz. of your favorite rum.
